Domingo Papalote Mezcal is crafted from the Papalote agave, also known as Agave cupreata. This particular type of agave is native to certain regions of Mexico, notably the states of Guerrero and Oaxaca. Unlike the more commonly used Espadin agave, Papalote agaves grow on mountain slopes and are known for their unique flavor profiles. Domingo Papalote Mezcal, like other mezcals produced from Papalote agave, often presents a more fruit-forward palate with notes that might remind one of tropical fruits, melded seamlessly with the signature smoky character of mezcal. The method of production typically involves roasting the agave hearts in underground pits to achieve the smokiness, followed by fermentation and distillation.
